On an Audi specifically
Audi models with an electronic parking brake need the rear calipers wound back through a diagnostic service mode before the pads come out. Forcing the pistons back by hand can damage the parking brake motors. Pad wear is signalled by a sensor in the pad, which is used up once it triggers the warning.

Disc thickness and surface are measured against the minimum stamped on the disc, and you see the numbers.

Slide pins and pad carriers are cleaned and greased so the new pads move freely and wear evenly.

How long can I drive after the brake pad warning comes on?
The warning means the pads are near their limit, not gone. You can drive carefully for a short time, but book the job within days. Once you hear grinding, metal is cutting the disc and the repair grows.
Do I need new discs with new pads?
Only if the discs are below minimum thickness, deeply scored, cracked or warped. The minimum is stamped on the disc and it can be measured in a minute. Ask to see the reading before you agree.
Can rear pads be changed without a diagnostic tool?
Not properly on an Audi with an electronic parking brake. The caliper motors have to be retracted in service mode and reset afterwards. Workarounds risk damaging the motor or leaving a parking brake fault on the dash.
Why do my brakes squeal after new pads?
New pads need a short bedding-in period, and light squeal can fade in that time. Lasting squeal usually means glazed discs, missing anti-squeal shims or carriers that were not cleaned. Go back and have it checked.
